As every year at this time of year, we've just come through two days of bottling: 34,000 bottles in two days. The weather was kind on both days, with very moderate temperatures and no rain. This is important when you bring the bottling truck into the yard.
This time it was the turn of the reds: Livinière Trois Écus and Soleil Rouge 2020, after a long ageing period of 18 months, including 12 months in barrel. And Minervois 2021 Hauts de Siran. We're very satisfied with these cuvées, which are making further progress in terms of precision and delicacy. At this stage, wood ageing seems to be well under control. And the wines have not suffered too much from bottling, and are ready to drink now.
But, true to our strategy, you'll have to be patient to discover them. We won't release them until they're ready for consumption. We are currently still selling Trois Écus 2017 and Soleil Rouge 2019 :).
