As organic winegrowers, we have always been deeply convinced of the importance of enriching our soil. This is a permanent objective of our vineyard work. And this takes place mainly in autumn and winter. For example, we create green manures by sowing every other row with a clever mix of cereals and broadleaf weeds that fix the soil's nitrogen.
